Ensue x Ecriture: Exclusive Virtual Collaboration w the theme of ‘Smoke & Flames’ @ Ensue – Futian

On 22nd October, Ensue will join forces with Two Michelin-starred Ecriture from Hong Kong for a virtual culinary crossover. The idea for this collaboration is to bring in exciting experiences at these times of restricted travelling, offering a rare opportunity for local guests to savour some of the finest flavors from leading chefs outside the region.
Together, Ensue Head Chef Miles and Ecriture Executive Chef Maxime Gilbert will create a collaborative menu that is inspired by the theme “Smoke and Flames”. For this special virtual event, two chefs will return to the roots and tradition of cooking, using fire and the finest seasonal ingredients to provide guests with a sensory experience, from smell to heat to taste.
Miles and Maxime both have an innate passion for flames. In their respective restaurants, they are masters of using open flames, heat and smoke to draw out the best aromas and flavours of ingredients. Fire has the power to achieve unprecedented results, transforming the simplest ingredients into the most gastronomic dishes.
At Ecriture, Chef Maxime elevates French cuisine to new heights by uniting it with exceptional Japanese and French produce to explore the endless possibilities that occur when Western craftsmanship meets Eastern philosophies.
Chef Maxime will be curating four unique recipes from Hong Kong, which will be passed to Chef Miles to execute in the kitchen at Ensue. To ensure the dishes are replicated as accurate as possible, the Ensue team will go through two weeks of thorough testing and checking with Chef Maxime, before presenting on the night. The menu will be combined with four more exclusive dishes from the team at Ensue.
